• Multi-grain Apple Oven Pancakes

Heat oven to 425’F.

Coat a 10X15X2″ pan with veg. cooking spray

In a large bowl, whisk together:

  1. 2 cups old-fashioned oats
  2. 1 cup white whole -wheat flour
  3. 1/4 cup oat bran
  4. 1/4 cup ground flaxseed
  5. 2 TBS. wheat germ
  6. 1/2 cup firmly packed light brown sugar
  7. 1 TBS baking powder
  8. 1 TBS ground cinnamon
  9. 1/4 tea ground nutmeg

In a small bowl, whisk together:

  1. 1 1/2 cups low-fat buttermilk
  2. 3 lg. eggs
  3. 1 TBS orange juice
  4. 1/4 cup canola oil
  5. 2 cups peeled and diced apples

Stir liquid ingredients into dry ingredients until just combined, being careful not to over-mix.  Lightly stir in 2 cups peeled and finely diced apples.  Spread batter in prepared pan.  Bake 15 to 18 minutes or until toothpick inserted in center comes out nearly clean.  Cut into 18 pieces and serve warm.  155 calories, 4.5 g protein, 3.5 g fiber  Serving size 1 piece
